For this wedding graze board our couple chose the following;
Golden Cross: Based on the French Sainte-Maure de Touraine, a soft goat’s log from just outside of Hailsham.
Cheesemakers Special: It’s a cross between a Mayfield and a comte matured for 14 months using different starter cultures, the cheese has calcium lactate crystals throughout giving it a nice crunch.
24 Months Aged Comte: Matured for a minimum of 18 and as far as 24 months, this beautiful Jura mountain cheese is exquisitely rich, complex, nutty and fudgy.
Brighton Blue: Mellow and mild this semi-soft blue cheese with a slightly salty finish is not only local, but world class! winning a super gold at the World cheese awards.
Wild Garlic Yarg: Wrapped in the pungent Ramson leaves that arrive in our woodlands each spring. They impart a gentle garlicky flavour and their moisture gives the cheese a slightly firm texture.
Baronet: Made by The Old Cheese Room in Corsham – Wiltshire. Mini Baronet is based on a reblochon recipe this rich buttery cheese has a washed rind. The rind is washed regularly until it develops its distinctive colouring, maturing in 4 weeks.
Baron Bigod: The only raw milk traditional brie de meaux style cheese made in the UK. It’s silky unctuous paste and long lasting earthy mushroom flavours make this a truly exceptional cheese.
All this cheese matched with our amazing Organic Italian Truffle & Fennel Salami and Traditional Hand Carved Sussex Cooked Ham. Obviously we have to mention Peters Yard Crackers with Bartie’s Sussex Faire Chutneys and Plantin Truffle Honey .
