Hand ladled near Hailsham into log shaped moulds, these goats cheeses are then covered in a layer of ash before being mature and its velvety white penicillium rind forms. starting with grassy, citrusy notes as the cheese matures it becomes more dense, earthy and complex in flavour. great on a cheeseboard this cheese can also be cooked or grilled.
